Ginger Crackles

These cookies are one of my favorite Christmas cookies.  My mom made them for us every year and they have now become a tradition in my own home.  

Make sure you save some for Santa!

 

 

Recipe:

3/4 cup shortening, softened

1 cup sugar

1 large egg

1/4 cup molasses

2 cups all-purpose flour

2 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons ground ginger

1 teaspoon ground cinnamon

1 teaspoon ground cloves

 

Additional sugar

Instructions:

In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and molasses.

In a separate bowl, combine the flour, baking soda, salt, ginger, cinnamon, and cloves ; gradually add to the creamed mixture and mix well. 

Roll into 1-1/2-in. balls, then roll in sugar.

Place 2 inches apart on a parchment lined baking sheet. Bake at 350°F for 8-12 minutes or until golden. Don’t overbake, cookies should be slightly soft when removed from oven.

Cool on baking sheet for a few minutes then transfer to cooling racks to cool completely.

Makes about 40 cookies.
