Pumpkin Pie Overnight Oats

This quick and easy, creamy, deliciousness can be served hot or cold. Makes approximately two 8 oz servings and only takes about 5 minutes to prepare.

  • 1 cup rolled oats
  • 1 cup milk of choice
  • 1/3 cup pure pumpkin purée
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla
  • pinch of salt
  • sweeten with maple syrup to taste
  • 1 tbsp chia seeds (optional)


  1. Mix together all the ingredients except the toppings
  2. Pour into a jar, cover
  3. Refrigerate overnight
  4. Top with your choice of toppings and enjoy!

Optional toppings:

  • chopped pecans
  • chocolate chips
  • whipped cream
